Easy to Walk Right Past this Shop Chef Chow's Signature Dishes here..
農圃 has been respected by local diners, actors or businessmen for years. I haven't returned back for a little while (perhaps its shows you how much I do like or do not like it ) but it was definitely above your typical suburban grade Cantonese restaurant. It might not be very very good yet one can't argue either that everytime you visit there you do sense the kitchen had at least shown an effort to make your dishes more appealing! Now that 農圃 has finally gained 1 Star from the Michelin Crew, let's go back to basics and not forget the inventor who first pioneered the Glutinous Rice Chicken wing signature dish, then left for overseas for a while before returning back to open his .... huh, what? 茶餐廳? Nevermind.
黑糯米釀雞翼 $48 -
The original version of 糯米釀雞翼 served in 農圃 is served with white sticky rice. Despite haven't been back to 農圃 for years, I actually tried one from a stand last year at some Victoria Park trade show. The version here differs as its stuffed with well cooked black sticky rice that's been seasoned with a strong herbal & spice seasoning, which is a lot stronger than the original version. The skin of the wing is very crisp and well cooked, the secret to this is how the Chef needs to hang the wings until it dries on the surface. It is then fried rather than grilled to give it that crisp texture. Very Good - and a twist on the chef's 1st version, but a little over seasoned. 4.2/5

This is another one of their signature dishes here, an Omelette Rice, not dissimilar to the Japanese Omu-rice version which sits on top, rather than wrapped around it. The beaten eggs mixture together with some sprouts, onion, char siu pork, shrimps, srping oniones, etc, can be seen on the photo above to have a crisp outer edge from the wok-chi, while still remaing nicely moist inside.

This was definitely cooked very well just like the fried stuffed-wing above and very rare to find in a Hong Kong Cha Chaan Teng. On the other hand? The rice beneath it was just good old plain rice with some soy sauce, which is fine by me but could be too plain for some. The other grip I had lies with the omelette itself: despite the inner wetness, the crepe was rather 'thin', and just like the chicken wing it was over-seasoned with very obvious Curry Powder which ruined the whole balance as it was too pungent, reminding me of localised Portuguese Chicken. 3.8/5
THEY have other signature dishes here such as the Fried Beef Rice. If you add around $4.0 more, you do get a slightly rather than substantially bigger portion of meat or eggs & fillings in the omelette rice - I really like this idea. If you ask politely you also receive a very good bowl of Daily Soup for FREE, thanks to the woman opposite me who hinted this to me.
