The Green Sauce is an herb vinaigrette sauce. Served with hot or cold (usually boiled) meats.restaurant

INGREDIENTS:

Parsley


1 garlic clove

4 anchovy fillets

3 pickled cucumbers

capers

1 boiled egg

Oil

Salt

Pepper

Chop parsley ,garlic, anchovy and pickled cucumbers very finely.



In the meantime, boil 1 egg and then chop it with a fork.

Then mix the chopped egg with all other ingredients and add oil slowly ,little by little.

Add salt and pepper



This is the traditional receipt for green sauce but you can find variation with fresh basil, lemon juice and vinegar.

You can also use other kind of pickles in order to make it tasty.

It's very fast and easy!


This kind of sauce is very savory and it’s served very often in Italy with boiled meat.
