Today I’d like to explain you how to cook risotto with zucchini.ナイフとフォーク Ingredients: Parmesan cheeseチーズ 3 tablespoons butter Oil Salt&pepper 2 medium zucchini

7 cups of vegetable stock

3/4 cups of rice
parsley 1 onion
First of all, bring vegetable stock to boil with water in a medium pot.
Then, cut into slices the zucchini, the onion and parsley.
Melt oil in a large stock pot over medium heat. Stir in onions and cook until softened.
Add the zucchini and blend for 2 minutes.
Then, add the rice and cook for another 2 minutes, stirring constantly, until toasted.
Gradually add the vegetable stock, stirring continuously.
Risotto will become "creamy" as soon as the vegetable stock will be finished.
Add salt and pepper. When almost finished, add the parsley, melt 3 tablespoons butter and the parmesan cheese. Just before serving the dish, sprinkle with remaining cheese.
