my mother has been making this cake since I was a kid. And the recipe comes from her best friend.
Ingredients:
2/3 pears
1 tablespoon of cinnamon
10 tablespoon of sugar
1 tablespoon of baking powder
1 teaspoon of vanilla
5 tablespoon of cocoa
1 teaspoon of salt
2 eggs
2 3/4 cups of flour
50 gr butter
1 cup of milk
20 amaretto biscuits
Preheat oven to 180 degrees. First of all prepare the pears: peel, core and chop them into chunks. Toss with a bit of cinnamon and sugar and set aside.
Stir together eggs, added one at a time, with salt, sugar, oil and vanilla in a large mixing bowl.
Mix wet ingredients into the dry ones whisking together flour, amaretto biscuits finely minced, baking powder, cocoa and cinnamon. And add milk and melted butter.
Spread the pears over the mixture and melt together with all the other ingredients.
Scrape down the bowl to ensure all ingredients are incorporated.
Bake for about 45 minutes, or untile a tester comes out clean.
Cool completely before running a knife between cake and pan, and lay it onto a platter.
The cake gets better the second day, when the pears juices seep further into the cake.
