Today I'd like to show you how to cook a rice and legumes soup!
Ingredients:
1 carrott
1 onion
parsley
oil
salt&pepper
paprica
2 stock cubes
rice&legumes
water
parmesan cheese
Directions:
Cut the onion, carrot and celery.
In a large pot over high heat, heat the oil. Add the onion, the carrott and the celery and saute for 2 minutes. Add the the rice and legumes and saute for 2 more minutes.
Add water and stir.Bring to a boil, reduce heat to low and simmer for 20 minutes, stirring occasionally.
Add the salt, pepper, paprica and the stock cubes, cover the pot and simmer for an additional 10 minutes. Turn off the heat and allow the pot to sit, covered, for about 10 minutes.
Ladle soup into individual bowls. Top each serving with 1 tablespoon of parmesan cheese.
It's very simple to cook but so tasty!
