Today I will introduce you a typical south italian dessert: "the lamb" made with almond paste.

First of all, why a lamb? A lamb is for Catholic religion a symbol of sacrify, like Jesus done in the past, before his resurrection.

So, as Easter is the Ressurrection on Jesus, some families, use to prepare this dessert.

Here you are ingrediens:
1 kg of almonds, 750 gr powdered sugara, a zest of lemon 6 plum cake, small pieces of dark chocolate, liqueur, jam or Nutella chocolate cream.

How to do it:
Cook the almonds into a pot and boiled water for 5 min. When they are ready, empty the pot of water, wait some minutes and peel the almonds. Chop the almonds together with the zest of lemon and the powdered sugar. Everything have to be very very thin. Mix everything.



Now you have a paste and you can create you lamb by hand or helping you with a lamb shaper kitchen.

Leave a hole in the middle in order to fill the lamb with crumbled plum cake and pieces of chocolate, nutella or jam.

Now cover the hole with the rest of the hole with the rest of the almond paste.

Decorate your almond paste lamb with small chocolate eggs, flags and bells.

Cover the lamb with a film and leave it some days in order to make the paste be solid.


After 3-4 days, your lamb is ready!
