today I will talk to you about “the ricotta cake”, one of the most famous Italian Easter cakes. Now i show you how to cook it. If you come here in Easter period you cannot taste it.

RECIPE

Ingredients for the pastry:

500 gr of flour

3 eggs

230 gr butter

200 gr of sugar

1 lemon zest

Ingredients for the cream of wheat:

500 g of wheat

500 ml of milk

1 lemon peel

1 of vanilla extract

Ingredients for the cream cheese:

500 g cheese

350 grams of sugar

1 teaspoon cinnamon

1 orange

Ingredients for the custard:

3 egg yolks

500 ml of milk

40 grams of flour 00

120 grams of sugar

Preparation time: 1 hour 30 min

Cooking time: 1 hour

Total time: 2 hours 30 min

PROCEEDINGS

Put the cooked wheat in a bin with 500gr of milk, grated lemon peel. Bring to a boil, until it become cream.
In the meantime mix 500gr. of RICOTTA(buttermilk curd), 350gr. of sugar, a sachet of vanilla, a vial of orange flowers(essence) and candied cedar in bits. Finally add the cream with the wheat.
Apart prepare a PASTA FROLLA(dough for shortbread)with 500gr of flour "00", 3 eggs, 200gr. of sugar, 230 gr. of butter.
Cover the bottom of a round pan, greased with butter, with this PASTA FROLLA and pour the cream.
Garnish with stripes of PASTA FROLLA like a tart.
Put in hot oven at 180/C for 60 minutes.
Allow to make cold in oven and finally sprinkle icing sugar on. "
