Today I'd like to give you a special recept for
a typical Italian dish: Gnocchi (a kind of first course)
In Italy we use to eat gnocchi on Thursday but of course you can
have it when you prefer.
Ingredients:
1 kg of potatoes
300 g of flour
1 egg, extra large
salt  as you need
Boil the potatoes into a big pot.

Drain the potatoes and pass them under running cold water.
At this point, remove the peel and mash in the mill. In case you had not, put them in a bowl and mash with a fork.

Take the pastry timber and pour in the flour to form a mound. With the fist of your hand make a hole and put us inside the egg, the salt and the mashed potatoes.

Knead and work the mixture for a few minutes until it is smooth and elastic and your hands remain dry.

At this point, take strips of pasta, and make a kind of sausages like a finger.

Cut small pieces of approximately 2 cm and with a fork or with the index finger make a little pressure on each of the pieces in order to give the rounded shape of the gnocchi.

Now, let stand for 20 minutes so that they become firm and compact.

Cooking is fast. You have to take a large pot and fill it with salty water.
When it boils, add little by little grocchi and keep then away after 5 min apx (When they come to the surface of the water, it means they are ready)

You can eat them with a very large souces (tomato souce, ragu, pesto)
The classic version is with the tomato sauce, a little 'of parmesan cheese and a basil leaf.
This time i choosen a very light version just with some butter and  sage.
